Bovril Soya Mince
Makes: 4 – 6 portions Cooking: Simmering
Preparation Time: 50 minutes Cooking Time: 20 – 25 minutes
Ingredients
| 200 | ml | Soya mince |
| 500 | ml | Hot water (2 Cups) |
| 30 | ml | Olive Oil (2 Tbsp) |
| 80 | g | Onion, chopped |
| 80 | g | Green pepper, seeded and chopped |
| 80 | g | Yellow pepper, seeded and chopped |
| 80 | g | Red pepper, seeded and chopped |
| 5 | ml | Crushed garlic and ginger (1 tsp) |
| 5 | ml | Curry powder (1 tsp) |
| 1 | ml | Cayenne pepper (¼ tsp) |
| 3 | ml | Thyme, dried (½ tsp) |
| 3 | ml | Italian herbs, dried (½ tsp) |
| 200 | g | Beef mince |
| 200 | ml | Water |
| 40 | ml | Bovril (2 Tbsp + 2 tsp) |
| 10 | ml | Tomato paste (2 tsp) |
| 150 | g | Mixed vegetables (tinned) |
| 5 | ml | Salt (1 tsp) |
| 10 | ml | Sugar (2 tsp) |
Method
- Place the dry soya mince in a bowl, and pour the hot water over. Stir and let it sit for 5 – 10 minutes, until soft. Drain the excess liquid and gently squeeze out the extra moisture. Set aside.
- Heat the olive oil in a large saucepan over medium heat. Add the onion, green pepper, yellow pepper and red pepper and sauté until soft and slightly golden.
- Add the crushed garlic and ginger and cook for another 1 minute.
- Stir in the curry powder, cayenne pepper, thyme and Italian herbs and toast the spices.
- Add the beef mince and cook for 10 minutes or until browned. Add the hydrated soy mince to the pan and mix well.
- Stir in the Bovril, tomato paste, mixed vegetables, salt and sugar and cook for about 10 – 15 minutes.
