Bovril Boosted Beef
Makes: 4 – 6 portions Cooking: Simmering

Ingredients
| ½ | Red pepper, seeded and diced | |
| ½ | Green pepper, seeded and diced | |
| ½ | Yellow pepper, seeded and diced | |
| ½ | Medium onion, diced | |
| ½ | Red onion, diced | |
| 30 | ml | Olive oil (2 Tbsp) |
| 2 - 3 | Carrots, peeled and grated | |
| 300 | g | Corned beef, diced (1 tsp) |
| 2 - 3 | Tomatoes, grated | |
| 5 | ml | Brown sugar (1 tsp) |
| 3 | ml | Cayenne pepper (½ tsp) |
| 3 | ml | Thyme, dried (½ tsp) |
| 3 | ml | Salt, adjust to taste (½ tsp) |
| 5 | ml | Italian herbs spice (1 tsp) |
| 5 | ml | Crushed garlic and ginger (1 tsp) |
| 20 | ml | Bovril (4 tsp) |
Method
- In a bowl, combine all the diced peppers and onions and mix well.
- Heat the oil in a medium-to-large saucepan over medium heat. Add the mixed peppers and onion and sauté until soft and fragrant.
- Stir in the grated carrots and cook together for about 15 minutes, stirring occasionally.
- Add the corned beef and mix gently to combine. Stir in the tomatoes and add the sugar to balance the acidity of the tomatoes. Allow to cook for 5 – 10 minutes.
- Season with cayenne pepper, thyme, salt and Italian herbs spice and mix well. Stir in the garlic and ginger.
- Stir in the Bovril, ensuring it is evenly combined. Reduce heat to low, cover the saucepan, and allow the mixture to simmer gently for 30 minutes, stirring occasionally to prevent sticking. Serve hot with pap, rice, samp and beans, or fresh bread.
