Golden Glazed Chicken

Makes: ± 600ml   Oven: 220 °C / 430 °F
Preparation Time: 1 hour 15 minutes   Grilling Time: 15 – 20 minutes

Ingredients

125 ml Apple cider vinegar (½ Cup)
360 g Tomato sauce
120 g Brown sugar
70 ml Worcestershire sauce (4 Tbsp + 3 tsp)
30 ml Dijon mustard (2 Tbsp)
5 ml Black pepper (1 tsp)
10 ml Paprika (2 tsp)
10 ml Onion powder (2 tsp)
10 ml Garlic powder (2 tsp)
120 ml Water
15 ml Bovril (1 Tbsp)
850 g Chicken (Cut of your choice)

Method

  1. In a bowl, combine all the ingredients, except the Bovril, and mix until well combined.
  2. Pour the sauce into a pan and over medium heat, bring to a boil for 5 minutes, while stirring.
  3. To thicken the sauce, cover the pot with a lid and lower the heat. Add the Bovril and allow the sauce to simmer for a further 10 – 15 minutes, stirring occasionally. Remove the pot from the heat and allow to cool, for at least 15 minutes.
  4. Place the chicken in the sauce, making sure all the chicken is evenly coated. Place the chicken in a roasting pan and pour the remaining sauce over the chicken. Cover the pan with aluminium foil.
  5. Roast in preheated oven at 220 °C / 430 °F for 25 – 30 minutes, turning the meat and basting it after 10 minutes. With the last remaining 5 minutes, set the oven to grill to get a golden – brown finish and serve.
